Premium Girello Roast

Hey there. Thanks for scanning and purchasing (hopefully!) one of our Premium Girello Roasts at Harris Farms.

So – first things first. The roast you are holding in your hand is actually (surprise!) wagyu beef. We don’t shout about it, but we just think that the extra marbling from wagyu gives a much better roasting experience for this cut. So there you go.

The meat is 100% carbon neutral, as it has been covered under our WORLD FIRST carbon neutral company wide certification. More info here.

Girello Roast

Serves: 4  | Preparation Time: 10 mins | Cooking Time: 40 – 70 minutes

  1. Preheat oven to 160ºC. Brush the beef roast lightly with oil and sear it in a pan on all sides over a moderately-high heat until evenly browned. Season with salt and pepper.
  2. Place the beef on a rack in a roasting dish.
  3. Roast for 35-40 minutes for rare, 45-50 minutes for medium and 60 minutes for well done.
  4. For ease and accuracy use a meat thermometer.
  5. Remove the beef roast from the oven, loosely cover with foil and allow to rest for 10-15 minutes. Slice the beef thinly to serve.
