Lamb Backstrap. A tender cut, lean, with a beautiful delicate flavour. Easy and quick to cook, like you would a steak. A lovely cut that allows the gentle flavours of our Roaring Forties Lamb to shine through.
Lamb Fillets. Tenderness to die for. A very mild and delicate flavour. Perfect for quick grilling or pan frying. Don’t cook past medium – as it is a very lean cut.
Also known as the “Mid Loin Chop” or the “Lamb T-Bone”. An all time favourite. One one side of the bone runs the “Sirloin” muscle, which gives a wonderful flavour coupled with the outer fat cap that runs along it. The smaller muscle on the other side of the bone is the tenderloin – which will melt in your mouth every time.
Lamb Royalty. The cutlet comes from the Lamb Rack and combined a beautifully tender eye muscle, with a nice cover of fat to allow the flavours of our Roaring Forties Lamb to shine through. Grill simply, or combine with a good quality panko for some delicious crumbed cutlets.
